hormonal behavior getting bad?

So, my 12 year old African Grey (Gizmo) has a lot of hormonal behavior and I don't really know how to get her to stop. She's a very sweet bird who loves to be stroked on her neck and head and likes to be sat on my shoulder.

But since I'm the only person in the house who handles her she decides to act hormonal a lot and it can be difficult. If I put my finger in her cage to stroke her like I normally do, she will grasp it and attempt to perch herself on my finger and she opens her wings and shakes her tail feather. I know this behavior is basically normal but I don't know how to get her to stop. It's almost as if she only ever wants to behave like this. Any help?

*i should add, she does not pluck her feathers or anything like that. she is not under any kind of stressful environment.

Hi :)
Can I ask what routine she has
When hormonal it's adviced 12-13 hours of Total darkness of a evening
Avoid animal protein foods and warm foods too
I know it's hard but when she acts like this
Don't say anything , just walk away till she calms down
Yes you may be up n down like a yoyo
But it needs to be done
Also no strokin below the head as this is technically foreplay :panic:

.Try to ignore the behaviour but its hard
