Can I ask if you have had blood works done at a vets ?
Make sure it's a Avian specialist not just a normal animal vet
This will rule out any illness
And then you can work on anything else zz

No havent done any bloods with the vet yet.
My vet is a exotic bird specialist.
I spoke with him and sent him some pictures over before he said its molting
But im not sure.
I haven't seen any bald patches or loads of grey feathers in her cage

It could well be
Plenty of sprays will help soften and new feathers comin in and ease the irritation cx

If you have rules out all illness (full blood work needed ) and you are makin sure she is fed right and has the right environment /enrichment then you may have to except it .
I do make soft collars for pluckers if you want to inbox me x
